New York is full of these little niche restaurants. It's great! We have mac and cheese, rice pudding, a ton of others that I'm forgetting now, and, my favorite, peanut butter. We had a grilled cheese place but they got run out on a rent hike (very common).

And cupcakes! NYC has gone cupcake-crazy. And of course the Belgian french fry stands have become somewhat ubiquitous (the perfect late night snack, incidentally).

It's interesting to watch the niche trends that wind through the city by way of its specialty restaurants. Some survive, some don't... they always get a lot of press when they open.

I want to know your thoughts on this blog because the author claims that niche markets are for scarcity minded people.

It's amazing to hear him say that because every other top marketer I know says that there are "niches in riches."

I came across this article doing research on our site- I am one of the owners and am in charge of the marketing of Chedd's. Thank you Ryan for noticing what we are doing as we believe that niche marketing is the only way to go. My business partner is from Wisconsin, we only use Wisconsin cheese as another marketing tool, and we have one all of our awards without marketing to any individual asking for votes. We believe in our product first and foremost and would love to talk to anyone else about it. We have just started to franchise and will be offering them nationwide (we are currently ready to go in over 40 states)

That's commendable (and amazing!) that you've won your awards without asking for votes.

Most businesses ask for votes, which makes their awards (if they've won any) a little less genuine...
